sweep the leg cupcakes

These absolutely decadent cupcakes came to my twisted mind the first time I tried Infamous Brewing Company's Sweep the Leg Peanut Butter Stout. It needed to be made into something delicious with some butter, flour, sugar and a little bit of magic (crack).

banana cardamom scones

These banana scones were delicate and chewy, more like a biscuit it than a drier scone. I'm obsessed with the banana-cardamom combo right now, and the vanilla bean glaze was a great compliment to the banana flavors.

hair of the dog cake

I love rum cake, so I was definitely looking forward to making this one on New Year's Day with the rest of the crew over at Baked Sunday Mornings. The cake is a little boring-looking, but is super simple to put together and tastes awesome. I have a confession, though...

I may or may not have also made the rum syrup from the Triple Rum Black Pepper Cake from Baked Elements and poured that over to soak in while I made the broiled frosting from this recipe in Baked Occasions. Hmmm... What can I say? Rum is best served in cake form!

wintermint cake

This week's recipe for Baked Sunday Mornings was the Wintermint Cake from the newest book, Baked Occasions. I had a few holiday gatherings to attend this weekend, so I decided to share the love with cupcakes!

The cake fell a bit and was sort of crackled or bubbly, but it sounds like it's a volume versus weight measuring situation, and I'm not the only one who had it! Luckily dipping the tops of the cupcakes into peppermint ganache and piping some tasty peppermint buttercream over that pretty much solved that aesthetic issue. I topped them off with some silver sprinkles and a mini York Peppermint Patty. They've received rave reviews so far and I'd definitely make them again!

campfire cookies

My mind was not blown by these cookies... I don't know if it was the weird, melty marshmallows or the cinnamon... or the fact that the dough was super crumbly and wouldn't stick together when I was scooping.... But the co-workers at the office LOVED them and I'd probably try them again if an occasion called for something camp-themed...?
Speaking of Occasions, that's where this recipe came from! My first recipe from Baked Occasions, baking with the amazingly talented and cool peeps over at Baked Sunday Mornings.

pumpkin cinnamon rolls

These Pumpkin Cinnamon Rolls from Baked Elements are to die for! I decided to make a glaze with the leftover pumpkin puree and it definitely kicked the pumpkin flavor up to awesome mode!

This was last week's Baked Sunday Mornings assignment, but I had to leave town and wasn't able to pull it off. But I've wanted to make these since I got the book and I'll definitely be making them again!

chocolate cheesecake muffins

I was able to bake with the lady who started me baking at a very young age this week... My mom! It was fun making these for Baked Sunday Mornings with her, but she totally snuck half whole wheat flour into the batter, then I forgot the chocolate pieces to finish it off, so they were a little lackluster in the flavor department! It's a great recipe from Baked Elements that I would absolutely try again.

Lots of changes in my life, so I haven't been the best participant, but these were fun to make with candy (I used Dove Sea Salt Dark Chocolates) and a very simple cookie dough. bananas cake

After a long hiatus, I thought it would be fun to make the cover recipe from Baked Elements for today's Baked Sunday Mornings assignment! I made cupcakes instead of a layer cake so they'd be easier to take to the offices, but since the buttercream didn't turn out (sounds like I had some of the same issues as others did), I don't think they're going anywhere. I ate one cupcake without anything on it and the cake was awesome! I'd definitely make this again, but with a different chocolate frosting.

simple chocolate whiskey tart with whiskey whipped cream

I had already made this week's Baked Sunday Mornings assignment, so I thought I'd go rogue and make up a recipe I missed a few weeks ago! This tart was easy, delicious and perfect for a Valentine's Day dessert. I love boozy desserts and this one did not disappoint... Rich, sweet, salty and just a little drunk (insert "how I like my men" joke here). Another winner from Baked Elements!

bale bars

A new job included a new phone this time, which somehow didn't save my mobile Blogger post and this photo, so we get the Instagram screenshot!

I wasn't terribly impressed with these, but they were still good. They're so similar in flavor to the Good Morning Sunshine Bars! They are easy to make, however, and might even be fun to do in little hay stacks in cupcake liners or something...

good morning sunshine bars

These bars from Baked Elements are super sweet and full of nostalgia for me, as I'm sure they are for many others... My grandma makes a version with Special K (white instead of brown sugar, sans the added salt, peanuts and vanilla) and over the years she started melting butterscotch chips in with the chocolate, and they're wonderful!

When I make these again, I think I'd use less sugar and a different cereal. It was hard to not smash the Chex up, so I'd probably go for Rice Krispies or Special K. I also think the addition of pretzels would put them over the top! Good to be back in the swing of things with my Baked Sunday Mornings friends!

brown butter snickerdoodles

These are amazing snickerdoodles! Browning the butter definitely adds a depth of flavor you usually wouldn't get in any other ol' snickerdoodle. I had to raise the oven temp so they wouldn't melt flat, but other than that they are easy to make and so delicious! Recipe from Baked Elements, for Baked Sunday Mornings!

classic apple pie

So I went a little rogue again, ya'll... See, I'm up in Michigan visiting my in-laws and they have a lovely piece of land where all sorts of fruit trees and my mother-in-law's garden thrive... Including this apple tree in the photo above (one of five). I had every plan to make the Mile High Cake for Baked Sunday Mornings this weekend. I even bought the two types of chocolate needed for the ganache, but these trees and my first Labor Day Weekend off in SEVEN+ years called to me...

"Make Apple-y things with us, Sarah," they said. No, I'm not on drugs. Just euphoric from a six mile run, a fun apple-picking session with my husband where we saw lots of little cute frogs living in the fallen apples and probably livin' large on all those fruit flies, and relishing in the fact I don't have to work at a restaurant this fine weekend (and a glass of sauvignon blanc). The Baked: New Frontiers in Baking recipe for Classic Apple Pie calls for Granny Smith Apples, but these apples are free, organic and delicious, so I made an executive decision... Use these friggin' tasty apples I have been eating like crazy for two weeks, add some ginger and dark brown sugar to the recipe, and sprinkle the top the Madagascar Vanilla Bean Cane Sugar...

This photo of the finished product is a bit alien, but it's cooling as I type and will later be served with vanilla ice cream and Baked's salted caramel... I will add a serving photo later, so check back if you have time. I have a feeling the filling is going to be a bit soupy (added an extra 1 1/2 teaspoons of cornstarch and about a tablespoon of flour to the filling and it still seemed runny), but it will certainly taste great.
